Chicken Porridge(鸡肉粥)

The weather is turning cold. Have some left over rice from last night? Craving for a hot bowl of soup? Make porridge. Nice and delicious.

If you have a rice cooker, before you go to bed add some water to the left over rice and switch to congee. The next morning, remove the congee from the rice cooker and put into a pot. Add some chicken stock, some chicken thigh pieces, some salted fish (can be bought from Chinese grocery), some salt and some ginger slice. Bring to boil and reduce heat. Keep stirring else it can get burnt for 10mins or till chicken is cooked. If you like egg, crack an egg onto the bowl first and then add in the hot porridge. Serve with spring onion, some white pepper and  fried onions.

Did the Pan-fried Pork chop with the Worcestershire sauce for dinner. Serve with steam rice and stir-fried lettuces.


4 pieces of the pork chops season with sea salt and black pepper and sprinkle some olive oil on the pork chop. Set aside for an hour. Some Worcestershire sauce and some abalone sauce. 1 red onion. Some roast garlic, lettuce.

4个猪排赛季添上海盐和黑胡椒。撒上一些橄榄油在猪排上。搁置一个小时。需要一些伍斯特郡辣酱油和一些鲍鱼汁。 1个红洋葱。一些烤大蒜,生菜。

Add a little oil to the non-stick pan and add in the pork chops. Pan-fried till brown on both side for a few minutes. Remove. Using the oil left behind, add in the onion and stir-fried till soft. Add in the Worcestershire sauce and abalone sauce for a min. Remove and pour over the pork chop and serve. For the lettuce- add some oil in the wok, add in the roast garlic for a min till crispy. Add in the lettuce and when done, remove and serve.

Oyster is know to be the best source for zinc.Where Zinc helps fight infections, improves our immune system, maintains healthy nails, skin, hair, tissue growth and repair.

Easy to make :mix some soya sauce and sesame oil, roast garlic and spring onion. Squeeze some lemon onto the oysters and add sauce. Follow by the roast garlic and spring onion

Simple Fried Chicken (简单炸鸡)

Fried chicken is a dish that most people adored. To keep it moist and juicy, I have realised that corn starch and egg plays a very important role. Additional, I find that using free-range whole chicken is better than using chicken wings. Usually I remove the skin of the chicken and only left with the wings with skin on.  As it is just too hard to remove the skin from the wings! :)

1 whole free-range chicken , a few table spoon of the plain flour, 1.5tsp of salt and some white pepper. An egg and 1 tbsp of the corn starch. A tbsp of the turmeric, 1tbsp of the cayenne and some seasoning flour which I always use KFC flour.

Chop the chicken into pieces . Marinate with salt, white pepper, turmeric,cayenne. Set aside for an hour.  After an hour, add in the egg and the corn starch to the seasoned chicken. Mix the plain flour with the KFC flour.

Coat the chicken with the mix flour and fried with fresh oil. When crispy and brown, remove from the oil and set aside.

Home Style Kaya Jam

Kaya Jam with toasted bread is the traditional breakfast for lots of the Singaporean and Malaysian.

Kaya recipe :

3 eggs plus 2 egg yolk, 75g white sugar, 35g of brown sugar, 250ml of coconut milk and a few pandan leaves


- Mix the eggs and the sugar till the sugar dissolve
- slowly add in the coconut milk
- put in the pandan leaves
- put to low heat and keep stirring till it thicken. Remove and strain it and put 1 drop of the green coloring (you can add another drop if u like it greener in color). Then put in a glass bottle and put in the fridge.


- 混合鸡蛋和,直到溶解

- 慢慢加入椰奶

- 加入香兰叶

- 降低发热量低不断搅拌,直到它变厚移除将1滴的绿色着色(如果你喜欢它的颜色绿可以添加另一滴然后把一个玻璃瓶,并把它放在冰箱里

when ready to eat : Toast the bread, spread with butter and then the kaya jam. I am sure you will really like it.

Ah Ma Bee Hoon Kueh(米粉粿)

Ah Ma Bee Hoon Kueh(米粉粿)

Mum's recipe which she has done every time I go back to visit her. I like it and now the kids love this dish too. Simple but good and very easy to cook. The soup is very sweet due to the Ikan Bilis.

Soup Ingredients:

Some garlic, Shallots and Ikan Bilis, Some chicken pieces or mince meat, dried mushroom -soaked in warm water for at least 10 mins, some fresh coriander for garnish, some sea salt.

Stir fry the onion and garlic with some olive oil and some sesame oil till fragrant. Add in the Ikan bilis and stir fried till brown. Add in water and bring to boil. Add in the chicken pieces, mush room and some salt. Leave to boil and then simmer down for 20 mins.

Bee Hoon Kueh :
Plain flour and add in water till it form a dough. Knead it for a while till smooth.

Add in the Bee Hoon Kueh to the soup and boil for 10 mins and add an egg (l love half-cooked egg) if you like. Remove and serve with some white pepper powder and fried onion. Garnish with fresh coriander.

This dish can be served if plain rice or egg noodle soup if you don't wan to serve it with Bee Hoon Kueh. For egg noodle, boil the water and make sure it is boiling hot. Put the noodle in for a min. Remove quickly and rinse with cold water. Then pour the soup over the noodle.

Juicy yummy double layer cheese Pizza with Salami and pasta sauce. Use the same dough recipe but instead roll it into thin layer. Put lots of cheese and fold the layer and roll again together. Leave 2 cm on the rind and put cheese along the rind and fold over. Put on the pasta sauce and then layer of cheese. Repeat it and then put on the salami and other ingredients that you like. then layer with another layer of cheese.

Done this recipe before but did not recorded the steps and the nice juciy pictures. My dear friend Lay Kwan did it today and contribute all the photos. This recipe is from Including myself, 2 other friends have tried it and every one agree that it is one of the best recipe. The meat simply melt in the mouth and the sauce smell and tasted good.

BBQ sauce : 
1 cup of ketchup, 1 cup vinegar, 1/2 cup dark corn syrup, 2 teaspoon sugar, 1/2 tsp salt, 1/4 tsp garlic powder,1/4 tsp onion powder, 1/4 tsp tabasco sauce


Combine all of the ingredients for the BBQ sauce in a pan and over hig heat. Blend till smooth. When the mixture come to boil, reduce the heat and simmer uncovered. After 30-45mins when the sauce thicken, remove from heat.

Remove the membrane of the ribs and clean the ribs. Put in boiling water for 30mins. Coat the ribs with sauce and wrap up with aluminum foil and put to bake at 250F. Bake for 2 hours. Remove and put in the fridge with the wrap on to cool down. Before serve, coat the ribs with remaining sauce and grill them till warm and a little crispy.

3.30 - 45分钟后酱汁变浓,熄火。

Simple Breakfast-Half Boiled Egg

Eggs has lots of proteins, vitamins, minerals and various trace nutrients as quoted in many websites. Anyway, egg is delicious to be cooked with many type of ways. Traditionally, my dad loves to eat 2 half boiled eggs every morning and my mum cooked it in a perfect way. Never over cooked nor raw. Is always perfectly half boiled. I tried many times to do that here and never success. Finally, Dad told me the secret.  The timing must be exact, he said.

So here is the secret:

Boil the water in a kettle. Pour the water into a pan and put in the eggs. Cover it with the lid and set aside for exactly 7 minutes. When done, cracked the egg and it will be exactly half-boiled.

Add some soya sauce, white pepper and some fried onion. If you want, you can also add in sesame oil. Simple but just very delicious and addictive. Beware, you might crave for it everyday!

Healthy Instant Noodle Soup(老鼠粉湯)

Breakfast is usually bread and cereal here in OZ. But after staying here for so long, I am still not used to that. In the morning, time is kind of short as have to rush for school and work. But with this recipe, all is cooked in 10mins. No hassle. Better than commercial instant noodle.

Some chicken powder(鸡汤) or stock, Cherry tomatoes (樱桃西红柿)-great for skin-should have some every morning. Was told it reduces wrinkles..For my age really need it.. Anyway, some chicken thighs (
鸡腿肉去皮)cut into small pieces. Being lazy to wash, I used scissors (my husband said only lazy people do that) to cut the meat.

Some vegies(菠菜)- spinach or choy sim (菜心)are all ok. An egg(蛋).

Boil the water or to be quick just get the kettle to do the job. Fill the boiling water in a pan. Put in the chicken powder , chicken to boil for 5-8mins. Then add in the tomatoes,  and rice droplets (or Bee Hoon) boil for 1mins. Then add the egg and vegies and boil for 1 min. I like the egg half cook. Transfer to a bowl. Serve with some sesame oil, some soya and fried onion. If you like it spicy, add in some fresh cut chilli.

Slow-cooked Leg Of Lamb(烤羊腿)

Slow-cooked Leg of Lamb(烤羊腿)

This dish takes time but you will never regret it. Cook it on Sat or Sunday or in a big festive and everyone will love you. The left over can be used for making sandwich/Wraps for lunch box the next day. The recipe is from Bill Granger. One of my favourite Australian Chef.

Ingredients :

2-2.5kg of leg lamp on the bone, sea salt and grounded black pepper, 1tbsp of dried oregano, juice of 1 lemon, 2 tbsp of Olive oil

1.5 kg of potatoes, 1/2 tsp dried chili flakes, 2 minced garlic cloves, 1/2 cup double cream, 4 thyme sprigs, 15g butter, 3 tbsp Parmesan cheese.


Pre-heat oven to 220 degree. Clean and pat dry Lamb. Season well with salt and pepper and put in a roasting tin and. Sprinkle with the oregano and lemon juice. Drizzle with some olive oil and put in the oven for 20mins. Add in 1 cup of the water and cover with foil.

Reduce the oven to 160 degree and roast for 3 hours. Basting every 30 mins. Remove after 3 hours, remove the juice (get rid of the excess oil in the juice if you don't like so much oil). Arrange the potatoes on the tray and put to the oven to roast for an hour. Set aside the lamb after 1 hour.

Sprinkle the potatoes with chili flakes and garlic. Pour in the cream and thyme, butter and cheese. Put to the oven to bake for 10mins. Remove and serve with Lamb and the sauce and some fresh salad.

Made this for lunch and the kids love it.

Dough ingredient:  (recipe from one of the internet site. cannot remember already in the memory)
1.5 cup of warm water, 2 tsp of dried yeast, pinch of caster sugar, 4 cups of plain flour, 1tsp salt, 1/4 cup of olive oil for brushing. You can make double amount and froze the remaining.

Make the pizza dough. You can alway make extra and freeze it so that is easier. Put some oil on the baking pan. Place the dough as shown. Put some pasta sauce, followed by the cheese
Add the salami and another layer of the pasta saue
Add the shredded cheese, followed by the Ham and another layer of sauce and shreedded cheese.
Put to bake at 220 degree for 10-15mins. Remove the pizza from the tray and serve while hot.

Peranakan Chicken Curry(咖喱鸡)

Easy to cook and make use of spices instead of ready made packet curry paste from the grocery that tends to be very oily. Good with Rice, Roti or just yellow noodle or toasted bread. 

3 sprigs of the curry leaves, 5 star anise, 1cinnomon,1 thumb size ginger, 3 glove garlics and 1 onion
Mix 3 tbsp of curry powder with water to form a paste, put to grind with garlic and onion and ginger till fine. Chop the chicken. Put the cinnamon, 5 star and curry leave to fry then add in the paste and stir fry. Remove from wok.
Addin the chicken to fry for a few mins till brown. Add in the spice paste.
Add in the coconut milk/yoghurt and salt and some sugar to taste. leave to low heat for at least 30 mins. Add in the tomatoes and chill and cook for another 10mins. Serve with rice. Curry tastes even better if left overnight. If it is to be served overnight, add the tomatoes and chilli before serve.

Had this for dinner today as too lazy to do otherwise. Use the meat left from the "Burger" recipes and just make our own sauce.

Sauce :
2 cups of the tomatoes paste, some sugar and some fresh tomatoes (diced) if you have.. I happened to have none left and all the tomatoes from the garden has been used no fresh tomatoes..taste better with fresh tomatoes.

Spaghetti cooked as instruction with some salt and some oil. When done rinse quickly with cold water and set aside.

Fried the onions and some garlic. Add in the tomatoes paste and the fresh tomatoes. Add in the sugar and some thyme.  Add in the shredded cheese. Stir till smooth. Serve the noodle with the sauce and top with shredded cheese.

I likes this dish alot. The main thing about it is that if it is not finished, you can always cook with claypot the next day. Or just get some minced garlic and spring onion , stir-fried it with dark soya sauce. If you like claypot lots, then cook it with some carrots, tufu, hoisin sauce, oyster sauce and alway always - an egg at the bottom.. Wah la the dish done..

Chinese style sauce:

2 tbsp Plum Sauce, 1 tbsp Hoisin sauce and a small of sesame oil, some garlice and spring onion. Mix well

Western style sauce : I used Gravox supreme gravy. Mix as instruction but add in grilled onions and some oil residue from the roasting of the pork.

Seasoning spice for the pork: 1tsp of the dry ginger powder, 1 tsp five spice,1/2tsp white pepper, 2 tsp salt. Mix together.

Wash well. Boil the pork in boiling water for 30 mins. Drain it . Cut the skin slightly and pat dry the pork with a towel and leave to air for at least an hour. Season the skin with some salt. Rub the meat with the seasoning spice. Leave overnight.

Put the pork to the oven for 250 degree the next day for an hour but keep checking without opening the oven.

very Juicy burger. Just need to cook the meat and the rest all done by the kids. They enjoyed putting cheese as much as they want, Grilled the bread and put lots of sauce.

I made sauce using the 2 tablespoon of the BBQ sauce and 1 tablespoon of the abalone sauce(can be bought from the chinese super market) with some of the oil used for the frying the burger meat.

I learnt a new skill today and below show right.. Professionally done...Sweet.

Ingredients: Mince pork, tumeric , cumin, onion minced, carrots minced, soya sauce, salt , some worcestershire sauce and plain flour. Mix and put to the fridge. By the way, as u mix the sauce to the pork mince u can actually smell the aroma..Then u know u got it right. The amount of the ingredients depend on the amount of pork mince you will like to have. After at least 4 hours, make it to round shape and coat with some KFC flour. Then pan fried it.

Round the meat ixture and put to fry
Mix the sauce, toast the wholemeal bread
Fry the burger till brown. When done, transfer to the Bread. Put a layer of the sauce on the bread before laying the burger meat. Put some tomatoes and cheese

Add in more sauce or salad or tomatoes or cheese depending on individual taste
Simple to cook and whole family enjoyed making their own version of the burger. If you find that the picture look good and juicy, THE FACT IS: IT IS REALLY JUCIY!!

I think will keep the blog as a records of all the cooking and baking that my daughter and I are doing. Anyway, she is very good at cake baking and she has the wonder of baking velvet cupcakes. One of the BEST cupcakes. She did one for my friends opening ceremony party and she loved it.

Well I am not a baking person, but lucky I have a daughter that really can bake. With us combine, we always have dinner and desert. Recently, for all the birthday's we cannot be bothered to buy but she will bake. Even her own birthday cake.. Poor her but we all recon that her cake is better than any out there.

This cake was specially done by her for her DAD's birthday. Alot of work.
